VEGETABLE QUICHE

 
1 1/2 c. cooked brown rice, room temperature            5 eggs or 3/4 c. egg substitute         3/4 c. shredded cheese, we use a Mexican Blend       1 1/2 c. chopped fresh broccoli        3/4 c. sliced fresh mushrooms                                       1/4 c. lo fat milk                               1 T. melted butter                                                          1/4 c. chopped onion, optional

Mix rice with 1 egg or 1/4 c. egg substitute and half the cheese. Pat in bottom and up the sides of a greased 11x7 pan. Saute onions and mushrooms in butter and steam the broccoli in the microwave for about 2 minutes. Beat remaining eggs with milk, add vegetables and pour over rice in pan. Bake at 375 for 20 - 25 minutes. Sprinkle with remaining cheese and place back in the oven just until melted.  (Rice may be cooked the night before.)

 
 

SUGARLESS FRUIT & NUT MUFFINS

 
1 c. chopped dates                                1/2 c. raisins                                                              1/2 c. chopped prunes                            1 c. water                                                                  1/3 c. margarine or butter, cut into pats         1/4 tsp. salt                                                    2 eggs, beaten                                                  1 tsp. vanilla                                                  1 c. flour                                                   1 tsp. baking soda                                                 1/2 c. chopped nuts

In saucepan, combine dates, raisins, prunes and water. Bring to a boil and boil for 5 minutes. Stir in margarine and salt. Set aside to cool. Add remaining ingredients; stir just until moistened. Spoon into 12 greased muffin tins or you may grease 32 mini-muffin tins. Bake at 350 for 15 minutes.
