We found this recipe in a farm magazine many years ago. We serve it often and it is our most requested. Enjoy!

Honey Baked French Toast
4 Eggs 4 Tbsp. Honey, divided 11/4 cups milk 11/2 tsp. Cinnamon 3 Tbsp. Brown sugar 2 Tbsp. Melted butter 12 slices Vienna or Italian Bread, diagonally cut
Grease 9x13 pan with Pam or equivalent spray. In medium bowl, combine eggs, cinnamon, 2 Tbsp. honey, mixing well. Add milk and mix well again. Dip bread into egg/milk mixture. Arrange bread in 3 rows overlapping slightly. Pour any remaining egg mixture over bread. Cover and refrigerate overnight. In the morning, sprinkle with brown sugar, then drizzle with remaining 2 Tbsp. honey and melted butter. Bake in 350 degree oven for 30 minutes. Serve with warm maple syrup. Serves 6

This recipe was published in an old Taste of Home issue. These moist muffins are also a favorite with our guests.
Blueberry Oatmeal Muffins
1 c. quick oatmeal
1 tsp. baking powder 1 c. sour milk 1/2 tsp. baking soda 1 c. flour
1/2 tsp. salt 3/4 c. brown sugar
1 egg, beaten 1/4 c. melted butter 1 c. fresh or frozen blueberries*
In a bowl combine oats & milk; let stand a few minutes. Stir egg and melted butter into oat mixture. Add dry ingredients, mixing just until moist. Fold in blueberries. Fill 12 greased muffin tins 3/4 full. Bake at 400 for 15-20 minutes or until golden brown.
*Fresh picked Canadian blueberries are the best--yummy!
